RECIPE | Sweet Potato Quinoa Stew

 

It’s not the prettiest to look at but I can assure you you’ll love the taste!  This is one of my favorite cold-weather recipes. It’s the best comfort food.  I love to make a big bowl of it to eat throughout the week.  I’m all about meal prep, it just makes things easier, and I never get sick of this soup-meets-stew.  See below for the recipe and cooking instructions!

INGREDIENTS

3-4 sweet potatoes

1 cup of dry quinoa

1 can of black beans

1 can of diced tomatoes

1 package of Taco Seasoning (I like Trader Joe’s)

1-2 cartons of chicken stock (usually there’s 4 cups per carton)

DIRECTIONS

Peel and chop up the sweet potatoes into small cubes.  Strain and rinse a can of black beans.  Strain a can of diced tomatoes.  Put everything into a crock pot with 1-2 cartons of organic chicken stock.  I used one this time, but you could do 1.5 if you want it to be more soup-like.  Add one package of taco seasoning (you can add less here if you’d like, it just depends how spicy you like it) and salt and pepper to taste.  Turn the crock pot on low and let it cook for 6-7 hours (until everything looks cooked through!).  You can also add chicken breasts to this recipe for some protein.  Just shred it up with two forks after everything’s cooked!  Voila!
